I'm trying to ressurect an old sort of abandoned Power Mac 7500....
um, using system 7.5, where do i look to determine how big the hard
drive is? I found the memory control panel, so i know i have 80 megs

but i cant figure out where it says exactly how much space is on the
drive, if i click the drive and go to GET INFO, it only tells me how
much space i've used, not how much free space is left.

also, where can i find what processor speed i'm running? I dont know
if its 100 or not, seems to me, a long time ago, it got a faster one
shoved in by some guys at my last job...

Apple System Profiler, in the Apple Menu... or via TechTool by MicroFormat.
I doubt the latest versions support O/S 7.5 (might consider upgrading to
8.1) but if you have a shareware disk from '97 or know where your local
Macintosh User Group is located, give that a go.
Another way is to remove the case of your machine and check the speed
printed on your daughtercard.
For a machine built in August, 95 you have a good machine.
I know the machine's specs are 601/100MHz at stock, but you mentioned some
guys 'got a faster one shoved in' by which I take to mean they replaced your
original removeable chip with a faster one.
(Your 50MHz system bus easily supports 604e and G3 daughtercards as well- if
you decide the G3 (Newer Technology) option, consider maxing the RAM (512M
via 8 DIMM slots requiring 64-bit wide 168-pin 70-ns DIMM) and hard drive
upgrade (and of course a MINIMUM of O/S 8.1).

The Apple System Profiler was introduced with OS 7.6. It may be on the
OS 7.6 boot disk that can be downloaded from the Apple site.
